Sticky Toffee Pudding Cupcakes

So with a minor snow “storm” upon us Dana and I decided to experiment with a new recipe, Sticky Toffee Pudding Cupcakes from the book 500 Cupcakes by Fergal Connolly. We knew after reading the recipe this would not be your standard cupcake. The first two things we noticed were no frosting and the recipe called for dates. Onward we pressed and found the recipe pretty easy to complete. After the 25 minute cook time we had 12 cupcakes to sample and share. These are more like a mini coffee cake and as the author indicates are best served warm. We omitted the parchment paper and used regular cupcake liners which created a slightly gooey bottom…we think.

    This is a belated posting… I thought the idea for the cupcake was very unique. Since it is like a coffee cake you can eat them for breakfast and not feel bad! It was very delicious and I was left feeling like I wanted another one! :)
